Tenderloin 10Q pound
A prized cut from the heart of the loin, renowned for its tenderness and mild flavor. It's hard to go wrong with this versatile cylinder of perfection. We like to apply a dry-rub then grill, pan-cook or quickly roast. Slice in medallions to serve, or cut crosswise into 2 or 3 pieces as "mini-roasts".
 
Ground Pork 3Q pound
80% lean pork is a great alternative to ground beef for hamburgers or meatballs. Grill or pan-fry... or mix ground pork and beef together for a flavorful and juicy meatloaf.
 
Pork Belly 7Q pound (order skin on or skin off)
The cut used for bacon, pancetta, Chinese braised pork dishes and "side meat" in the American South. Salt pork, an essential for baked beans or clam chowder, is made by curing pork belly with salt. A favorite of our customers who like to experiment in the kitchen and aren't afraid of a little fat.
 
Pork Chops (Bone In) 1.5 inch thick 11Q ea
Our bone-in chops create an impressive restaurant-style dinner presentation. Cut from the middle of the loin, they're tender, flavorful and ready to grill, bake or saute. Allow one chop per person.
 
Pork Spare ribs (full rack) 30Q
Flavorful and tender rib meat from the belly make these ribs our favorite. Our butchers remove the breastbone and square off the ends for a clean presentation. For optimal flavor, cook slowly, about 2 hours, over warm coals on a grill. Increase the flame the last 10 minutes for a nicely browned crust. These ribs can also be braised in the oven and finished under the broiler.
 
Baby Back Ribs 40Q (2 racks)
Includes two racks, each with 12 smaller rib bones, separated by delicious "finger" meat. Cut up after cooking and serve individual ribs as hors d'oeuvres, or give each guest a whole slab along with plenty of napkins! Package includes two 12-rib racks, each weighing approximately 1 1/2 lbs.
 
Boneless Pork Loin Roast 70Q (serves 10-12)
The great taste of pork chops and the impressive presentation of a roast. Our butchers skillfully roll and tie one piece of boneless loin for an easy-to-cook (and carve) roast. Prepare simply with herbs, or stuff with fruit such as apples and cranberries or dried apricots. We also recommend trying this with Made in Napa Valley Pork and Lamb Rub--the perfect blend of herbs, spices, and sea salt to compliment this impressive roast. Can be purchased plain or with the rub.
 
Pork Shoulder Boneless 40Q (7 pounds serves 8-12)
Our personal favorite among our pork roasts, this cut has more marbling than the pork loin roast, so the meat is incredibly rich and tender. With the bone removed and expertly tied by our master butchers, the pork shoulder firms as it cooks and turns into a perfect roast that's easy to slice.
